Almonds!! We love them around here....

Almonds are one of my favorite foods! I love them as a healthy snack, on top of oatmeal or cereal, as almond flour for use in baking, and ground up in marzipan. When I traveled a lot in the dance company back in the day, I almost always would take a container of almonds and dried cranberries with me to snack on.

Now, especially as a new mom who is still nursing, I again need quick and easy snacks just like convenient recipes. Luckily, there is a great company out there called Blue Diamond Almonds, who just released their BRAND NEW: Sriracha flavored almonds.
I have bought Blue Diamond products for a long time and they are the world's largest almond processing and almond marketing company. Plus, they are headquartered in Sacramento,where we lived for a few years! They recently sent me these Sriracha almonds to try and man, they are tasty!! The flavor is bold and I was a little worried they would be too spicy. Fear not my friends, they have the perfect amount of quick and these will have you licking your fingers!

To be honest, I haven't jumped on the whole Sriracha fad that has been going around. In fact, I've never even tasted it. However, after really enjoying the flavor on these almonds, I'm going to have to get a bottle of that popular red chili garlic sauce.

I decided to use some of the almonds for dinner last night and roasted some broccolini topped of by the sweet and spicy sriracha almonds! Here's the recipe:




Roasted Broccolini with Blue Diamond Sriracha Almonds

Place broccolini in a freezer size plastic bag. Add 1-2 Tbsp of olive oil to the bag and coat them well. Salt & pepper the broccolini to taste. Place on a sheet pan and roast the broccolini at 425 for 20 minutes.

Meanwhile, whisk together a vinaigrette of:
4 Tbsp olive oil
1 Tbsp Sriracha (or Tabasco, which is what I had)
2 tsp soy sauce
2 Tbsp rice wine vinegar
1 tsp sugar
1 Tbsp lime juice

Remove the broccolini from the oven and place on a plate or platter. Pour the vinaigrette over the broccolini. Top with the 2-3 Tbsp of the chopped Blue Diamond Sriracha Almonds.
